Next I use the magic spinquads to re-organize the polygon flow of those polys there 
This is how the ear and head looks like now. It's not the nicest head so far, but this is a basic starting head for whatever you want to model. It has only 522 quad polys.  So now for the detail; for example if you like to model some wrinkles there is a super plugin called FIs Wrinkle (search on www.flay.com for it). You only have to select some vertices and execute it - it will split them and create new ones. Let me show you: Select those vertices and execute it, result is shown here:
